Monday is usually a day when I really need to have a recipe picked out ahead of time. Something pre-planned because Monday’s are hectic enough the way it is.
Here’s another one from my good friend Robin. We went to school together (k-12) and now we’re neighbors, our kids are friends and we’re sharing recipes.
Chicken and Broccoli Alfredo
8 ozs fettuccine or spagetti noodles
2 cups fresh or frozen broccoli
1 tbsp oil
1 pound boneless chicken breasts, cut into cubes
1 can cream of mushroom soup
1/2 c milk
1/2 c parmesan cheese
1/4 tsp black pepper
Cook noodles. Cook broccoli. Brown chicken. Add soup, milk, cheese, and black pepper. Add cooked broccoli. Heat. Serve over noodles.
