Cottage Cheese Pancakes

Here is a great high protein breakfast to substitute for those high carb, high sugar ones that leave our kids bouncing off the walls! ;) I’ll admit that I don’t usually have time to fix my kids a proper breakfast in the morning so we usually grab cereal or Pop-tarts and the result is a sugar high.

Instead, these protein packed pancakes will leave them full and focused to get them through the morning and their school work! The best part, they love them!

I got this recipe from a fellow homescooling mom. She substitutes bean flour for the whole wheat flour. I didn’t have any whole wheat flour on hand this morning so I used regular flour.

Ingredients

6T butter

1 C cottage Cheese

4 eggs

1/2 C whole wheat flour

Directions

Melt butter in pan you will cook pancakes in. Mix all ingredients together including melted butter. Cook pancakes in butter-coated pan as you would other pancakes. Serve with nut butter or a little pure maple syrup, low sugar syrup, etc.
