I was over at a friend’s house visiting her and her new baby and she happened to be making up a few different recipes with Zucchini. She had Zucchini from her garden and now was making bread, cookies and had even had made pie before. The cookies she had made were really good so I had to go home and try my hand at them!
If you have your own garden with Zucchini, I’m sure you’re already baking away and probably giving everyone you know Zucchini! If not, stop on down to your local Farmer’s Market and pick up 1 small to medium size Zucchini and that should be plenty. I made a double batch. Which in hind sight, a single batch would have been plenty because even my largest bowl was barely big enough to mix all the ingredients together. Although believe me, we’re eating them all!
These are definitely MUST TRY cookies! You’d never know they’re made with zucchini. My kids love them!
Zucchini Chocolate Chip Cookies
3/4 c. butter, softened
1 1/2 c. sugar
1 tsp. vanilla
1 1/2 c. zucchini, peeled and grated
2 1/2 c. flour
2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
1/2 c. almonds, chopped
1 (6 oz.) pkg. chocolate chips
Cream butter and sugar. Beat in egg and vanilla; stir in zucchini. Stir in flour, baking powder, cinnamon and salt. Add almonds and chocolate chips. Drop by teaspoonful on cookie sheet. Bake at 350 degrees for 15 to 20 minutes. Makes 4 dozen.
