Spiced Tilapia With Sweet And Savory Relish
Tilapia is a family favorite in my house. I’m always trying to find new ways to cook it, pan fried, baked, broiled or braised. This is a recipe for broiled Tilapia with lots of flavor. Since Tilapia itself has a mild flavor, it absorbs the flavors from the savory relish. There are only a few ingredients and it makes for a simple recipe.
2 tsp olive oil
1 tsp ground cumin
1 tsp paprika
4 (4 oz each) tilapia fillets
1 1/4 cups pineapple in own juices (diced or crushed, canned or fresh)
1/4 cup diced sweet onion
1/4 cup diced plum or Roma tomato
1 1/2 Tbsp rice vinegar
2 tsp chopped fresh cilantro
1 fresh lime, juiced
In a small bowl, pour the olive oil, cumin, and paprika, stirring to combine well.
Brush or rub this mixture over tilapia, coating evenly; place tilapia on broiler pan.
Turn on oven broiler (or grill) and cook fish until white and flaky, about 6 to 9 minutes. Remove and set aside, keeping warm.
In a bowl, put the relish ingredients (pineapple, onion, tomato, vinegar, cilantro, and lime juice) and stir together until blended well.
Spoon this relish mixture over the warm fish and serve immediately.
I will be making this for my family in the next few weeks, I cannot wait to try the pineapple, together with the onion and tomato flavors. This is going to be a great dish. I will serve it with a side of whole grain rice and steamed veggies. Enjoy!
