Thrifty Tip – Bananas and Banana Bar Recipe

There are so many tips that we can share to be thrifty that I thought I’d start sharing one each week. Most of them are short and sweet.

Today’s tip is how to make your bananas last a bit longer before they go bad:

Take your bananas apart when you get home from the store. If you leave them connected at the stem, they ripen faster.

Now if you do happen to end up with overripe bananas anyway, here’s a great banana bar recipe for you. These are so yummy. Granted you might want to think that because they have bananas they are good for you right? Well with all of the ooey gooey cream cheese frosting on top, maybe not so much. ;) They are super good and a great way to use up those bananas.

I also use a version of this recipe to make pumpkin bars.

Banana Bar Recipe


  • 1/2C butter
  • 2C sugar
  • 3 mashed bananas
  • 3 eggs
  • 1t vanilla
  • 2C flour
  • 1t baking soda
  • pinch of salt
  • 1t cinnamon
  • 1/4t nutmeg
  • For the Cream Cheese Topping, you will need:
  • 1/2C butter
  • 4C powder sugar
  • 8oz cream cheese
  • 2t vanilla
  • (Set out the butter and the cream cheese to soften.)


  1. Bars - Cream butter and sugar, add bananas, eggs and vanilla. Mix. Add flour, baking soda, salt, cinnamon and nutmeg. Mix. Grease 15x10 pan. Bake at 350 for 25 min or until toothpick inserted in the middle comes out clean.
  2. Topping - Cream butter, cream cheese and vanilla. Slowly add powder sugar. Let bars cool well before spreading topping.
